Image    Szechuan dishes are noted for their varied and heavy flavours. The eight common seasonings used are pepper sauce, pepper with vinegar, pepper with fish sauce, chilli jam with wild peppercorn, cayenne pepper with wild peppercorn, black pepper with peanut and sesame paste, peppercorn with sesame oil and chilli oil - all a little on the hot side, but very tasty. Distinct dishes include pork and chicken cubes with peanuts and chilli, and 'clubbed chicken', which is chicken meat, first pounded and then shredded into floss before eight seasonings are added - a sweet but hot dish. Others include Luyang-style crisp chicken and bean curd.
